We pair our 2017 Petite Sirah with our family’s all-occasion favorite, Defiance Grilled lamb which is marinated and grilled to perfection!. Our inky, full-bodied Petite, compliments the earthy, mild gaminess of the meat, and draws upon the herbs and garlic of the marinade. The grilled lamb is complemented by the soft, tamed tannins and chocolatey velvet and vanilla on the palate, accompanied by the aromatics of blackberries found in our 2017 vintage.
Along with our Petite Sirah, Defiance Grilled Lamb can be served with a variety of Southern French-inspired side dishes, such as grilled artichokes, pan-fried eggplant, and roasted lemon potatoes.
Defiance Grilled Lamb
Prep time – 30 minutes Cook time – 3 hours
Ingredients 4 – 5 lb leg of lamb 5 – 7 garlic cloves diced 1 cup of fresh oregano 1 cup olive oil Sea salt & Pepper
Directions Prepping (4 hours prior to grilling)
Add 1 cup of olive oil to a bowl
Peel garlic cloves and dice with oregano
Add garlic, herbs, salt and pepper to olive oil and let sit for at least one hour (this can be done the night before)
Three hours prior to grilling coat lamb in marinade
Grilling The Lamb
Place lamb on the grill at medium to high heat
Sear all sides of the lamb letting it cook for about 5 to 10 minutes per side
Move heat to the sides of the grill and keep lamb in the center
Close lid of grill or cover with a metal tray
Cook until 125° to 130° for medium-rare
Times vary based on heat and density of lamb (about 20 minutes per pound)
Transfer the lamb to a carving board, cover loosely with foil and let rest for 15 minutes before slicing meat
